Serves 6

Ingredients

3 c vegetable broth or water
1 ½ c quinoa
6 poached large eggs
3 c sautéed spinach with lemon & garlic
¾ c ½” dice avocado
6 T crumbled goat cheese
dash hot sauce
2 T sunflower seeds

Procedure

1. Rinse quinoa in mesh strainer. Add to saucepan with water or veg broth, bring to boil. Cover, reduce heat, simmer 15 mins, or until liquid is gone. Remove from heat, let sit 5 mins; fluff with fork.
2. Sauté spinach with lemon & fresh garlic.
3. Poach eggs (or fry/scramble).
4. Each bowl ¾ c quinoa, 1/2 c spinach, 1 egg, 2 T avocado, 1 T cheese, splash hot sauce & 1 t sunflower seeds.
