Nicole is a chef, cookbook author, James Beard Award finalist, and restaurateur with a mission to share Filipino food and in the process elevate Filipino people. Nicole first dipped her toe into the restaurant business when she launched an incredibly successful series of pop-up restaurants, which eventually turned into Jeepney, a restaurant located in both NYC and Miami. When COVID-19 hit NYC. Nicole and her longtime sous chef “Dio” Rincon started feeding frontline workers out of the restaurant. This transitioned into launching Tita Baby’s meal kits, an immersive heat-and-serve meal experience that came with a booklet that had stories, historical context, and links to a curated Spotify playlist Nicole composed herself.
