Serves 6
Ingredients:
1½ tbsp olive oil
1 cup yellow onion, chopped
3 jalapeños, seeded & minced
1 tbsp garlic, minced
2 tsp chili powder
2 tsp ground cumin
6 cups chicken broth
5 roma tomatoes, diced
2½ cups cooked chicken, shredded
29 oz can hominy, drained & rinsed
¼ cup cilantro, chopped
1 tbsp fresh lime juice
salt & pepper to taste
Procedure:
1. Sauté onions in oil for 5 min.
2. Add jalapeños, garlic, chili powder & cumin, sauté another min longer.
3. Add broth & tomatoes; bring to boil, reduce to simmer for 10 min.
4. Add chicken & hominy, bring to 180°F; taste, add salt & pepper if needed.
5. Add cilantro & lime juice to serve.
Note:
*Top with grated cheese, avocado, sour cream, or warm tortilla chips.
