Serves 6

¾ cup butter
½ cup all-purpose flour
5 cups beef broth
2½ cups chicken broth
1 tsp ground black pepper
4 lb french fries
2½ cups white cheddar cheese curds

1. Melt butter & add flour in a saucepan, stir over medium heat until golden brown.
2. Add broths & pepper, bring to a boil while whisking.
3. Cook french fries until golden & crispy.
4. Add fries to serving vessel; top with gravy & cheese curds.
5. Serve immediately.

*Crispy bacon, sautéed mushrooms & caramelized onions all make tasty additions!
