Serves 12


1 t canola oil
1 sweet onion, peeled & finely diced
¼ t kosher salt
1 small clove of garlic
¼ t kosher salt
1 ¼ c sour cream
2 ½ T parsley, chopped
1 ¾ t lemon juice


1. Preheat oven to 400 °F.
2. Combine oil, onion, garlic and first quantity of salt.
3. Pour onto baking sheet; single layer; roast 15-20 mins, until caramelized.
4. Cool onion and garlic slightly.
5. Combine onion and garlic with the remaining ingredients in a food processor. Process until smooth.


*Chill and serve with fresh veggies or your favorite dipper.
