Christy’s Grandma’s Sweet Potato Pie

1 lb sweet potatoes or yams
1 can evaporated milk
1 cup light brown sugar
2 eggs 5 tbsp unsalted melted butter
2 tbsp vanilla extract
1 tsp minced ginger
1 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt

1. Boil sweet potatoes until fork tender for 15-20 mins and peel, or peel and bake in an oven at 350 350°F for 35 mins.
2. Whip sweet potatoes until fluffy and creamy.
3. Mix in ingredients and whip until almost fluffy.
4. Add mixture to unbaked pie crust and bake 45-50 mins at 350°F.
