Serves 12

Ingredients:

4 c all-purpose flour
2 ¼ t baking powder
¾ t kosher salt
1 T sugar
1 large egg, beaten
2 c milk
3 T canola oil
2, 4 oz cans of diced green chiles
4 T canola oil for cooking
2 c purchased queso or cheese sauce

Procedure:

1. Combine dry ingredients in bowl, mix on low speed for 10 seconds.
2. In a separate bowl mix together egg, milk, green chiles, and first quantity of canola oil. Add to mixing bowl with dry ingredients and mix only enough to moisten dry ingredients.
3. Heat the second quantity of oil in a large skillet over medium-high heat.
4. Drop 1 tbsp of batter into hot pan, flip until golden on both sides, remove from heat and place on plate with paper towels to drain.

Note:

*Serve with your favorite warm queso or cheese sauce.
