Serves 6

Ingredients:
½ tbsp olive oil
5 tbsp onion, diced
1 tbsp ginger, minced
3 cups red potato, diced, cooked
½ cup green peas
2 tsp curry powder
½ tsp ground cumin
½ tsp coriander
½ tsp salt
½ tsp pepper
¼ tsp turmeric
½ cup cilantro, chopped
1 tbsp lemon juice
2 sheets puff pastry, thawed
1 large egg, beaten

Procedure:
1. Preheat oven to 350°F.
2. Sauté onion & ginger until soft, about 6 min.
3. Add ingredients from potatoes through tumeric; remove from heat.
4. Stir in cilantro & lemon juice.
5. Cut puff pastry into 5″x5″ squares.
6. Brush pastry square with egg; add about 2 tbsp filling to one corner.
7. Fold opposite corner over filling; squeeze edges together.
8. Brush top of samosas with egg.
9. Bake for 20 min, until crust is golden.

Note:
*Great served with mango or mint chutney, tamarind sauce or kachumber salad.
