½ c water
4 ¼ T unsalted butter
½ t kosher salt
½ t ground black pepper
⅔ c all-purpose flour
3 large eggs
1 c pimento cheese


1. Place 2 oven racks – one in the top third of the oven and one in the center, preheat to 350 °F.
2. Line 2 baking trays with parchment or baking paper.
3. In a saucepan, bring water, butter, salt and pepper to a boil; add flour, stir with a wooden spoon until mixture forms a ball. Reduce heat, continue to cook and stir for 2 mins.
4. Transfer to mixing bowl of electric mixer, beat on medium speed for 3 mins to bring to room temperature, add eggs 1 at a time, beating well after each addition, until thick and glossy.
5. Hand stir in pimento cheese.
6. Transfer dough to piping bag, pipe 1 inch discs, 1 ½ inch apart on prepared baking trays.
7. Bake 20-25 mins or until puffed and golden; serve warm.
